Artichoke Balls

Yummy Artichoke Balls... a Party Favorite!

Ingredients:
1 can hearts of artichoke (#300 can), drain & mash
1 c. Progresso Bread Crumbs
2 raw eggs
2 tbsp. Italian cheese (Parmesan or Romano)
3 tbsp. olive oil
3-4 cloves of garlic, chopped fine

Directions:
Saute garlic in olive oil, then add to mashed artichokes, bread crumbs, eggs and cheese. Mix well. Refrigerate for 1 hour. Form bite size balls and roll in seasoned Progresso bread crumbs and Italian cheese. Bake on greased cookie sheet in 350 degrees for 15 minutes or until heated through. May be served hot or cold.
